Watercress Soup

It's the soup Liz Hurley swears by!

one onion, finely chopped
1.5 litres/2 3/4 pints vegetable stock
two potatoes, diced
3 bunches watercress, chopped.

Sweat one onion, finely chopped, in a little vegetable stock, add two potatoes, diced, and 1.5 litres (2 3/4 pints) vegetable stock and boil. Add 3 bunches watercress, chopped, then blend in a food processor.
