Rice Casserole

serves 6

This is a very easy casserole that is a favorite with my children.

3 cups cooked brown rice
3/4 cups sweet corn (frozen or fresh off the cob)
1 small onion, chopped
1 package grated soy cheese
1 1/2 cups soy milk
2 teaspoon chili powder
1/2 teaspoon cumin
salt and pepper as desired

Mix all the ingredients in a large bowl.
Spray a 2-quart casserole with Pam (low fat cooking oil spray) and pour the ingredients into it. Bake in a 350 degree oven for 45 minutes.
